Welcome to October! This month’s recipes will all feature a fall favorite flavor: pumpkin! This week’s recipe is quick and easy with three ingredients you can always keep on hand.

Mix, cook, and eat! Yep, it’s that easy. Use a little nonstick spray on a skillet or griddle and cook a couple minutes on each side until browned. Counts as one protein serving. (We think of pumpkin as a carbier veg so it would be IDEAL to have this at a carb meal and serve with some fruit for example.) Feel free to get creative with your protein powder – try a cinnamon, banana, or other flavor. Add spices like cinnamon, vanilla extract, pumpkin pie spice, etc.
