Preheat oven to 350. Combine all ingredients in a food processor until well combined, roughly 2 min. Spray 12 cupcake tins and pour in the batter. Bake 20-25 min and check doneness with toothpick. This recipe makes 12 fat servings as is. Feel free to halve, third, or quarter the recipe if you like math and fractions ;)
Like many of my dessert-y blogs, this isn’t a super sweet option, but might help with a tough chocolate craving when you don’t have a cheat meal handy. You can consider upping the sweetness with some Splenda/Stevia/Truvia. If you’re careful on portion control perhaps you could drizzle maybe a teaspoon softened/thinned out peanut or almond butter over a cupcake!
