Chocolate cake anyone? Not only it is tough to find a decent chocolate dessert that fits the Meltdown plan, but who wants to heat up an oven for a single-serve treat?! Check out this super quick, microwaveable cake that just dirties up one dish and one fork!

· ¼ cup almond flour
· 1 Tbsp cocoa powder
· ¼ tsp baking powder
· 5 packets Splenda
· 2 Tbsp oil
· 1 Tbsp water
· 1 egg
In 2-cup Pyrex dish, blend dry ingredients then add wet. Blend with fork. Cover with plastic wrap. Vent by cutting small slit in center of plastic wrap. Microwave on high 1 min or until knife comes out clean. Cool a bit before eating. How easy is that?!
Makes 2 fat servings, but isn’t terribly big, so you might consider using pumpkin in place of the oil so you can eat it all!!! Next time you get a sweet craving, don’t wait an hour for the oven to heat up and bake an unhealthy boxed mix – in minutes you can have a hint-of-sweet treat with protein-packed almond flour and a few staples from the fridge and pantry!
