In a small bowl, whisk the egg. Add the remaining ingredients and whisk until a smooth batter forms. Pour the batter into a mug (I chose to spray with nonstick spray). Place in a microwave and bake on high for 1 min. Done!
I made this a couple of times playing with the amount of syrup and Splenda to get the best texture. It might take a test or two to find out what ratio works best for you and your microwave. Some may prefer the looser texture from more syrup or the more cooked version with Splenda.
