It’s May and Friendly Feasting will be offering up great breakfast (or snack!) options for you this month. First up is a super option to lower your carb intake. I like quadrupling the recipe and divvying the batter into four ramekins. The leftovers just need a few seconds in the microwave to speed up your morning routine even more!

Spray a large ramekin or mug. Whisk baking powder and almond flour until combined. Add other ingredients. Microwave for 4 min. Allow to cool then pop out and enjoy.
These little babies puff up big time in the microwave to give you those little air pockets you expect from an English muffin but are light and fluffy. Each has 1 fat serving, ½ a protein serving, and ¼ of a carb serving. Round out breakfast with a hardboiled egg, and just under a full serving of fruit (half a piece or a heaping ¼ cup of berries would work, for example). Perfect for L1. On other levels, the carb is fairly negligible being ¼ serving so this would work well at protein/fat opportunities.
