Today I am excited to post a recipe sent to me by one of our awesome NGPT clients, Ashley. When I first started coaching her, she asked about recipe tweaking. Ashley shared that these don’t have a traditional dinner roll texture but rather reminded her more of corn muffins. She suggests next time adding a bit of Splenda for flavor.
Mix your almond flour, coconut flour, salt, and baking powder. Mix in your eggs, water, and coconut oil. Pour into 8 greased muffin pan cavities. Bake at 350 for 25 minutes. Top with a spritz of butter-like spray and a little cinnamon and/or a teaspoon of sugar-free syrup. Makes 8 fat servings (coconut flour carb is fairly negligible at 1/8 carb serving per one-muffin serving).
Bread is an American staple whether it’s to hold a sandwich together, sop up a sauce, pair with a soup or salad, or accompany a standard dinner.
