Preheat your waffle iron according to the manufacturer's directions. Combine all ingredients in a blender or Magic Bullet until smooth. Pour batter into waffle iron. Cook, according to directions. Pretty easy huh? Makes 2 carb servings as is. Consider adding cocoa powder (would require more sweetner I bet), cinnamon, etc. Pumpkin is subtle and adds moisture. The original recipe called for banana but the pumpkin substitute works for any of our food plans, does not “officially” count as a carb, AND boosts this recipes fall appeal!
