In a medium bowl, mix cumin, cayenne pepper, turmeric, and coriander. Place chicken in a bowl, season with salt and pepper, and rub on all sides with spice mixture. Heat 1 Tbsp of oil in a skillet over med heat. Place chicken in skillet. Cook 10-15 min on each side, until no longer pink and juices run clear. Remove from heat and set aside. Heat 1 Tbsp of oil in the skillet. Cook and stir onion, ginger, jalapenos, and garlic 5 min, or until tender. Mix in tomatoes; cook 5-8 min. Stir in milk. (I used 8-10oz coconut almond milk for less calories and fat so my sauce was thinner.) Serve over chicken.
