Ok one more week of buffalo chicken recipes! This one is for mini meatloaves. Sure, you could do a standard meatloaf size, but this helps with portion control, makes leftovers super portable, and is very kid-friendly!

Preheat the oven to 375. Place all ingredients in a bowl and use your hands to mix thoroughly. Plop mixture into 2 mini loaf pans OR 1 large loaf pan OR muffin tins. Bake 25-35 min or until chicken is completely cooked through. Feel free to toss in a baggie with more hot sauce to coat before baking or drizzle with additional hot sauce before serving. Makes 3+ protein and veggie servings. These are pretty dense without breadcrumbs that are used in standard meatloaves. You could add some almond flour (1/4 cup = 1 fat serving) if you like but I tend to keep it simple with just the egg for binder. As always, feel free to add in any additional veggies or spices you might like!
