  • Friendly Feasting: Chicken or Tuna Salad Boats

    Today’s blog is less a recipe than a list of ideas. Chicken or tuna salad is a tasty, portable snack that I enjoy and is a snap to whip up. Get creative with your mix-ins and your vehicle to make this snack your own!

    Chicken/Tuna Salad Boats

    • Canned or pouched tuna or chicken – drain and rinse canned meat well to limit sodium (or if you have leftover fresh chicken/turkey/tuna to cut up that’s even better!)
    • Veganaise (up to 1 tbsp per serving) or Avocado (up to ½ avocado) = 1 fat
    • Mix ins:
      • Dijon mustard is my favorite and helps moisten the salad without using too much veganaise
      • Other mustards – spicy, brown, etc.
      • Frank’s hot sauce for a little kick
      • Finely diced veggies
      • Quartered grapes (note this adds carbs)
    • Seasonings (example ideas below):
      • Rosemary
      • Garlic
      • Curry
      • Cayenne
      • Dill
    • Vehicles – add crunch!
      • Lettuce leaves for wraps
      • Hollowed out tomatoes
      • Hollowed out cucumber halves
      • Hollowed out jalapenos if you like a lot of spice!
      • Celery sticks
      • Crostinis made of Ezekiel bread toasted and cut into quarters (adds carb)
      • Or my favorite – halved bell peppers (could use minis as well!)

    My go to is chicken salad with a little veganaise, Dijon, and dill relish stuffed into red bell pepper halves! Great as a great on-the-go snack, lunch, or dinner!

    Counts as a protein (up to 8 oz) with 1 fat (veganaise or avocado per above) with optional fruit/Ezekiel bread as a carb.

    Feast crunchy, feast creamy, feast portable, and as always…FEAST ON!!!
