Happy Friday! Today’s soup selection includes one of my favorite veggies - mushrooms! Warm up and fill up with some fungi!
Chicken, Shiitake, and Wild Rice Soup http://www.skinnytaste.com/2011/01/chicken-shiitake-and-wild-rice-soup.html
· 1 tbsp oil
· 1 small onion
· 64 oz low sodium chicken broth
· 1 cups water
· 2 chopped carrots
· 3 garlic cloves
· 2 celery stalks
· 2-3 skinless chicken breasts
· ½ cup wild rice combo
· ½ cup brown rice (or sub both rices with instant)
· 4 oz. shiitake mushrooms, sliced
· salt and fresh pepper
Heat oil in a large pot on med heat, add onion and saute until soft but not browned, ~3-4 min. Add chicken broth, water, carrots, garlic, celery, and chicken, cover and simmer 20 min. Add wild rice mix, brown rice, mushrooms, salt and pepper to taste and simmer on low, covered 25 min, stirring occasionally. Remove chicken from pot and shred with two forks, return to pot, add more water if too thick, adjust salt and pepper to taste and serve. Makes 3 protein/carb servings with the amount of rice listed above.
