  • Friendly Feasting: Chocolate-Almond Bars

    I’ve got something TASTY for you today! These bars use chocolate chips so I recommend a sugar free and/or unsweetened chocolate chip or bar chopped into pieces. Otherwise they’re quite on plan and very delicious. Feel free to use peanut butter or another nut butter with this; however, I prefer the mild taste of almond butter.

     

     

    Chocolate-Almond Bars http://www.foodandwine.com/recipes/chocolate-almond-bars

    • ½ cup salted almond butter
    • 1 cup powdered Splenda (use regular Splenda or blend it with a bit of arrowroot powder to make your own powdered Splenda)
    • 2 Tbsp oil
    • ¼ tsp baking soda
    • ½ large egg
    • ¼ cup or less sugar-free or unsweetened choc chips

    Preheat oven to 375. Line metal baking pan with foil (I used two mini loaf pans). In a food processor, combine first 4 ingredients until creamy, but don’t overmix. Transfer dough to a bowl and stir in chips and almonds. Press into pan and bake 18-20 min, until top is shiny and lightly browned and center is a bit soft. Transfer pan to a rack to cool for 10 min. Slide bar with foil onto a work surface, discard foil, cut into portions. Makes 4 fats (1/2 original recipe) - so half of one of my mini-loaf pan bars.

    Enjoy this sweet treat on occasion, say, perhaps for the holidays?! Feast on almond butter, feast on small bits of chocolate, and as always…FEAST ON!!!
