Here’s another healthy cookie recipe to grace your holiday table! Do make these ahead of time to save you some headache and prep work the day of your gathering – plus, they taste better after some sit-time in the fridge!

In a mixing bowl, combine all dry ingredients and stir very well. In a separate bowl, mix all liquid ingredients. Pour wet into dry, stir to combine fully, transfer dough to a big plastic bag, and smush into one big ball while still inside the bag. (I just made little dough plops and didn’t waste time with all that – shocking I’m sure!) Remove from bag and make 8 mini balls, place on a greased cookie sheet, then refrigerate 30+ min, or freeze 15 min. (If you want crispy cookies, you can skip this step and bake immediately but I like mine chewy.) Preheat oven to 325 F, then bake 10-12 min. They will look underdone when they come out, but that is ok. Just be sure to let them cool another 10+ min before trying to pick them up. Keep them in the refrigerator at least overnight. A lot of this blogger’s recipe say to do that to improve flavor, and it’s true! I
