This is literally my #1 breakfast recipe – most frequently made and favorite. Quit horsing around and try it! It was also one of the very first recipes I found after joining NGPT while looking for new options. I absolutely love it. Not all recipes made with almond flour turn out as I’d like but I love these pancakes!

Spray a skillet with nonstick spray and heat over medium-high. Mix all batter ingredients in a bowl with a wooden spoon until blended. Pour a couple mini pancakes on the hot skillet and cook on the first side 3-4 min until almost done (I look for a few bubbles to pop up then peek for brownness on the bottom). Flip and cook another minute or so to finish. Combine more cinnamon and Splenda, and sprinkle it over hot cakes. Recipe makes 2 fat servings that each half ½ protein. I normally make about 8 small pancakes but if you prefer 2 or 4 larger pancakes, that works too! I like to add 1 scoop protein powder (cinnamon bun or vanilla work great) and another ¼ cup water to the mix to fill in the protein or you can just serve your pancakes with an egg cooked to order!
Depending on the nutritional plan you’re on, you can garnish with berries, top with a bit of nut butter (will increase the fat servings amount, however), or just a touch of sugar-free syrup. Feast on my favorites, feast on your own favorites, and as always…FEAST ON!!!
