One of the trickiest things I hear from clients is having to cook a separate meal for themselves than what they serve their families. It can be hard to get kids…and sometimes spouses…to want to eat healthfully; however, lots of recipes fit our plan and a kid’s palette. Today’s recipe is a sloppy joe recipe made in the crockpot, but could also be easily done in a skillet.

· 1 lb Italian turkey sausage, out of casing
· ½ cup chopped onions
· 3 cloves garlic, minced
· 1 red bell pepper, chopped in ½” pieces
· 1 green bell pepper, chopped in ½” pieces
· 1 1/3 cups crushed tomatoes
· ½ tsp dried rosemary
· salt and fresh cracked pepper, to taste
In medium non-stick skillet, cook sausage over med-high heat, breaking up as it cooks into small bits until cooked through, ~5-6 min. Add onions and garlic, and cook 2 min. Transfer to slow cooker and add bell peppers, crushed tomatoes, rosemary and fresh cracked pepper. Cover and cook on low 4 hrs. Makes 3 ½ cups. (Or you could cook it completely in the skillet). To serve, place a heaping ½ cup of meat on Ezekiel bread toast or English muffin and if desired, top with baby spinach. You could also eat it plain or on a salad too! Makes 2-4 protein/veggie servings on our plan.
Feel free to adjust this to the tastes of your audience – mild or hot turkey sausage or even just ground turkey or chicken would work. Add in some extra spices if you like and make it your own! Feast for yourself, feast for your kids, and as always…FEAST ON!!!
