Who loves brunch?! How about a French toast casserole that you can prep in advance and bake in the morning! French toast made with Ezekiel bread is pretty darn good, so that is always an option. However, this casserole may be a great option if feeding a group (feel free to double/triple recipe) or for something a little different!

Preheat the oven to 350. Spray a baking dish. Line the bottom of the dish with bread cubes. Beat eggs, milk, 1 Tbsp Splenda, ½ tsp cinnamon, and vanilla in a bowl; pour mixture over bread. Let stand 10 min or refrigerate overnight. Combine remaining 1 Tbsp Splenda and ½ tsp cinnamon and sprinkle over casserole. Bake until casserole is set and topping is crunchy, ~30-40 min. Determine portion size by how many slices of bread you used to cube into 2 ½ cups (2 slices = one carb). You’ll likely use 5 slices, give or take so 2-3 carbs total in the pan!
