Today’s my dad’s birthday and this recipe reminds me of him for a few reasons. First, he tends to eat pretty light and is the one in the family most likely to order fish. Although this recipe originally is for chicken, I think fish would be a great twist. Second, he’s the lemon person in our family. When we all get iced teas, in unison, the rest of us put our lemons on his glass. We shield ourselves from the spray when he squeezes that wedge over his dinner. So for dad’s birthday, here’s a light lemon main dish! And just look how pretty it is!

Rinse chicken under cold water. Pat dry with paper towels. Season with poultry seasoning, salt, and pepper. In large, non-stick skillet, heat oil over med-high heat. Add chicken to skillet. Cook chicken ~5 min. If using fish, adjust cooking time to 3-4 min per side. Turn pieces over and cook for another 5 min or until golden brown. Stir in garlic and red pepper. Add asparagus and cook for 1 min. Stir in zest and chicken broth/water and turn heat to low. Cover and cook for 3 to 5 min. Serve over rice. Counts as 4 protein/carb servings.
