This week’s blog began with a recipe my dad, a former boy scoutmaster, found in Scouting magazine. With just a couple tweaks it fits the NGPT food plans to a T and is unexpectedly delicious! Tilapia…tomatoes...green chilies...who knew??? Another couple perks to this meal: it's FAST prep and clean up! What more could you ask for?
Line a cookie sheet with foil and spray with non-stick spray for easy clean up. Place fillets on the sheet. Sprinkle with lots of seasonings to your taste and liking. Top with the tomatoes and chilies. Sprinkle Splenda all over the top (this recipe originally called for stewed tomatoes, which have sugar, so this is how I get the flavor but still serve it Meltdown friendly!). Broil close to the heat on high for about 30 min if fillets are frozen, less if thawed. Let the tomatoes blacken a little! They get all caramelized and sweet. Serve with salad, sugar snap peas as seen in the photo, or other veggie sides. If you choose to have this at a carb meal, it is certainly tasty over a ½ cup serving of cooked brown rice, but as is, this meal is protein/veggie only!
