I am so excited to share this pineapple stir fry recipe with you! It’s incredibly fast AND simple, as well as delicious. Honestly when I first read the recipe, I wasn’t sure how I’d feel about it but tested it out because it looked like a cinch. Boy, was I glad I did. It’s addictive – but healthy! Spray a large non-stick skillet and set over med-high heat. Add in chicken and spices and cook until chicken begins to brown on all sides (5-7 minutes). Stir in hot sauce and pineapple, cover with a lid and let cook about 5 minutes. Stir in pepper slices, cover with a lid, and let cook another 5 minutes. Remove lid, turn off heat and let cool for ~2 min. Makes 4 protein/carb (adjust meat and pineapple as desired; ½ cup pineapple = 1 carb). If L2 D1, serve over brown rice for 2-carb meal – delish!
I’ve been making stir fry for ages. Chicken and/or shrimp, a bag of frozen mixed stir fry veggies, and spices/approved sauce ingredients. I always enjoy it, but this was a really fun – and spicy! – variation. Definitely one of my go-to receipes now and one to share with my non-NGPT friends and family!
