    Ok, ONE more soup recipe before I head out for Spring Break, and we shift to other dishes!

     

    Red Bean, Chicken, and Sweet Potato Stew http://www.midwestliving.com/recipe/red-bean-chicken-and-sweet-potato-stew/

    • 2 15-oz cans no-salt-added red beans, rinsed and drained
    • 4 cups peeled, cubed sweet potatoes (about 1 pound)
    • 1 lb boneless chicken breasts, cut into bite-size pieces
    • 2 14 ½-oz cans reduced-sodium chicken broth
    • 2 ½ cups chopped sweet bell peppers (2 large)
    • 14 ½-oz can no-salt-added diced tomatoes, undrained
    • 10-oz can tomatoes and chopped green chiles, undrained
    • 1 Tbsp Cajun seasoning
    • 2 cloves garlic, minced
    • ¼ cup creamy peanut butter
    • Snipped fresh cilantro


    In a 5- to 6-quart slow cooker combine beans, sweet potatoes, chicken, broth, sweet peppers, diced tomatoes, tomatoes and green chiles, Cajun seasoning, and garlic. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours. Remove 1 cup of hot liquid from cooker. Whisk in peanut butter. Stir into mixture in cooker. Garnish with cilantro. Makes 15 carbs as is each with a smidge of fat. Increase your serving size by halving the beans and sweet potatoes and upping the protein!

    This was a very different option for me! I haven’t had too many soups that call for sweet potatoes and I’m not a big bean eater (my standard chili is beanless!). But this dish is quite tasty and hearty. Feast on soups, feast on stews, and as always…FEAST ON!!!
