Tired of the standard baked sweet potato? Personally, I am truly not in to the sweet recipes, like your standard Thanksgiving staple with tons of sugar and marshmallows. I prefer my sweet potatoes savory, I tend to eat them plain and just add some salt/pepper or few spritzes of not-actually butter or roasted in the oven. This is an all-in-one recipe for your carbs, protein, and even some veggies that give the ol’ sweet potato a little spotlight. Feel free to make this your own by adding or swapping different vegetables and spices. Maybe a dash or two or Worcestershire sauce? Like it hot? Add some Frank’s hot sauce!

Preheat oven to 425. Cover a baking sheet with parchment, foil, or a Silpat liner. Place potatoes cut side down on the sheet and cook for 30 min or until soft. While potatoes are baking, heat a large skillet over medium. Add onion and peppers, cooking for ~5 min or until soft. Add tomato paste, water and carrots, cooking 2 min. Add ground meat and break up with a wooden spoon. Cook until meat is no longer pink, stirring occasionally to keep it from sticking. Add tomato sauce, sweetener, vinegar, mustard and water. Allow to come to a low boil, then lower the heat and cover. Cook for 15 min or until most of the liquid is absorbed, stirring a couple of times. Taste for seasoning. Meanwhile, remove potatoes from oven and allow to cool. Once cool enough to handle, carefully scoop out cooked flesh and place in a large bowl. Add the meat mixture and stir to combine. Season to taste with salt, pepper and garlic powder (I added a little hot sauce too!). Place empty potato skins back on the baking sheet and stuff them with the potato/meat mixture. Put back in the oven for ~5 min before serving.
I hope this recipe gives the sweet potatoes in your home new life! Feast on sweet potatoes, feast on yams, and as always…FEAST ON!!!
