BACK BY POPULAR DEMAND!!! This is one of my all-time most loved and most requested Meltdown-Friendly recipes. With the switch-up in our website, it has gotten difficult to access older blogs so I’ll be pushing those out with tags for easy search-ability. This week’s blog is something dieters assume is off limits: barbeque! BBQ is generally packed with sugar (if a sauce is thick…assume it’s unhealthy due to sugar, carbs, or cream). In this recipe, sugar-free syrup lends a hand, as well as a reduced-sugar ketchup offered by Heinz (1g sugar/serving), lighten the sauce so you can enjoy it without guilt!

Place the chicken breasts into the bottom of a slow cooker. In a bowl, stir together the ketchup, mustard, lemon juice, garlic powder, syrup, Worcestershire sauce, chili powder, cayenne pepper, and hot sauce until the mixture is well blended. Pour the sauce over the chicken, set the cooker to Low, and cook for 6 hours. Shred the chicken with two forks, and cook for 30 more minutes.
This recipe alone just counts as protein - measure out how ounces you want/need based on your current nutrition plan. Certainly, you could mix the same sauce ingredients without a slow cooker to use on grilled chicken or with other meals. The pulled chicken can be eaten right off a plate or try these ideas:
* Carb meal? Serve it as a sandwich or open faced on toasted Ez bread, or better yet, an Ez English muffin!
* Make a big veggie salad and top with the BBQ chicken - you may very well not need any dressing!
* Cut a bell pepper in half and stuff each side with half of your chicken
I know, I know. This is all very exciting. Hit the grocery store for fresh chicken and any pantry items you don’t already have and get to crockpotting this weekend! Feast on BBQ, feast pulled meat, and as always…FEAST ON!!!
