Here’s one more crazy sunflower seed butter recipe to try for St. Patrick’s Day. I’ve taken my standard peanut butter recipe and just subbed in sunflower seed butter. This is great for those who work in or whose kids go to school in nut-free environments. These just got a smidge of green tinge to them as they were very flat. I’d remake them per last week’s blog notes and leave the batter in the fridge for a few days to get green then bake the cookies with green batter.

Preheat the oven to 350° and mix sunflower butter with Splenda, baking soda and egg. Roll tablespoons of the dough into 8 large or 16 small balls. Bake for 8-12 min, until the cookies are lightly browned and set. Let cool on a wire rack. Makes 8 fat servings so 1 large or 2 small cookies = 1 fat serving. (Feel free to halve this recipe. I’ve done a half recipe with both a half egg – whisk then just use half – and a whole egg and either way works fine.)
