    Don't let the recipe name scare you off! Cooking in bulk and pre-cooking food to use in a variety of ways are major time savers. I finally gave this recipe a whirl after cooking and mashing up lots of sweet potatoes so that ingredient was in the fridge and ready to go.

    • 1 fist-sized sweet potato, cooked and mashed
    • 2 eggs
    • 2 Tbsp natural (no sugar in ingredients) peanut butter

    Mix, cook, eat!

    So simple…especially if you have precooked sweet potatoes on hand. With precooked potatoes, this is a twist on breakfast you can whip up for yourself or the whole family in no time!

    I did double this recipe for a full protein/carb/fat meal1. The ½ potato : 1 egg : 1 Tbsp pb ratio worked well. You may want to adjust this slightly if it seems too eggy, for example. Sear it in a pan sprayed with nonstick spray to get a bit of a crust on the outside and cook until it’s done.

    This is certainly an unusual pancake recipe, but who said pancakes had to be nutrition-less flour, sugar, and butter messes? Feast on sweet potato, feast on peanut butter, and as always…FEAST ON!!!
