  • Friendly Feasting: Triple Berry Chia Pudding

    Looking for a breakfast that is sitting in your refrigerator waiting on you in the morning? Check out this triple berry chia pudding recipe. The chia seeds absorb the liquid and create a gelatinous texture. I did not care for the big chunks of berries in my pudding, so I ended up blending it in my Magic Bullet and created more of a smoothie, which also made it drinkable and therefore more portable.

    • 1 cup coconut or almond milk
    • 1 cup fresh berries (I used strawberries, blackberries, and raspberries)
    • 2 Tbsp chia seeds
    • 5-6 drops liquid stevia (or try Splenda/sugar-free syrup)

    Combine all in a glass jar with a lid. Cover and shake well. Set aside 15 min. Shake again and refrigerate 5-6+ hours/overnight.

    As noted, if you don’t have liquid stevia, you could use Splenda or a bit of sugar-free syrup. Use sweeteners sparingly and add to taste. Add protein powder (and some extra liquid to compensate) to create a protein/carb breakfast ready immediately for you to grab on your way out the door as you head to work or a workout. This recipe uses two carbs servings’ worth of berries. Adjust to ½ cup, eat at a Level 2 two-carb meal, or have half on two separate days. If you add protein powder, use up to two scoops if you want to make two separate servings. Another option is to have this with eggs or other protein source if you like to chew your breakfast more! J Of course this is a great option for anytime of day too!

    Keep this speedy recipe close at hand. Inevitably some mornings are just crazier than others: a kid gets sick, you spill coffee on your clothes and have to change, or you forget an early meeting you must rush off to attend. I suggest making this two-serving batch and using it the two days a week something goes awry! Feast with berries, feast with chia seeds, and as always…FEAST ON!!!
