Shred/grate zucchini. In a large bowl, beat the eggs. Add flour and beat. Mix zucchini, salt, pepper, and any other spices together and add to egg mixture. Heat skillet on med-low heat. When hot add about 1-1.5 Tbsp olive, coconut, or grapeseed oil to just coat the bottom of the pan. Spoon mixture in hot pan to the desired size of fritters. The whole recipe counts as 1 fat/veg/protein – if you choose to cook these with just nonstick spray, the tbsp almond flour is pretty negligible even if you eat the whole batch.
